My name is Alex and my beautiful wife Tonya Renee has been the Guinea Pig thru all my trial and errors. She is a tough critic  yet she knows good food. I keep telling her I want a food truck or restaurant so hopefully this can be my culinary start.

Hickory Smoked Yard Bird

This IS my most favorite dish to do on the grill. Slow smoked barbeque wings and breasts. If you have plenty of time, it takes very little effort and the result is absolutely amazing!

What you will need:

24 Chicken Wings (whole)

4 Chicken Breasts

1/2 tsp. Cayenne Pepper

1/2 tsp. Black Pepper

1 Bottle of BBQ Sauce

1Bottle of Raspberry Vinaigrette .

2 Drops of Dave's Insanity Sauce

8 Sticks of Hickory Wood


Combine the dry ingredients with a whole bottle of BBQ sauce with 1/2 bottle of the vinaigrette. Stir well and add 1 drop of the insanity sauce. taste and add the second drop if you dare. Serious though the sauce will not be that hot. It will have great flavor with just a slight tickle on the back of your throat.


Now it' is time to fire up the grill/smoker. Be sure and not use just wood chips for this recipe because the result will not be the same. Start your fire suing only one stick of hickory first. You are looking for a desired temperature of around 225 to no more than 250 degrees. To get more smoke from your wood submerge in  water the night before.

When you reach 225 degrees add the chicken. The smoke time will be approximately 4.5 to 5 hours. Apply the sauce over the last hour of the cooking cycle to give it a nice glaze over the meat.
